Creamy Tomato Soup

The Ultimate Comfort Food

1/4 lb. bacon
In a large pot or dutch oven cook bacon on low heat until fat is rendered.

1/2 onion chopped
4 carrots chopped
3 stalks celery chopped
2 garlic cloves chopped
2 tablespoons butter
Add vegetables and butter and sweat vegetables.

2 tablespoons flour
Dust mixture with flour coating vegetables.

1 bay leaf
1 teaspoon thyme
1 teaspoon coarse salt
1/2 teaspoon pepper
1 - 6 oz. can tomato paste
2 - 15 oz. cans diced tomatoes
3 cups chicken stock
Add above ingredients, simmer for one hour.
Remove bay leaf
Blend soup with hand blender until creamy.

1 cup cream
Add cream and serve.  Serves 6
