chocolate chip cookies
put them together and i'm giddy
a little more on the cookies in a bit but first
i'm on the road again
i'm having a fun few days
visiting my daughter allison and her family
we've been rearranging furniture and accessories
as you know, one of my favorite past times
allison just painted the entire inside of her house
so some tweaking was in order
and of course playing games, reading books and getting lots of hugs from my grandkids

peanut butter oatmeal and chocolate swirl cookies
3/4 cup unsalted butter
1/2 cup creamy peanut butter
1 cup sugar
1/2 cup dark brown sugar
1 teaspoon vanilla
2 eggs
in electric mixer with paddle attachment
cream butters together until smooth
add sugars and vanilla until well combined
add eggs one at a time mixing after each
add
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cups all purpose flour
2 cups original oats
mix until well combined
put batter on parchment paper and roll up like a tootsie roll
place in fridge for 30 minutes
in double boiler melt
12 oz. chocolate chips
2 tablespoons unsalted butter
on a floured piece of parchment
roll out dough in rectangle about 1/4" thick
frost dough with melted chocolate mixture
roll up using parchment
place in fridge for 30 minutes
slice about 1/4 inch thick
makes 30 cookies
bake at 375 degrees for 8 minutes or until golden on top
