a not so guilty snack

roasted tomato salsa

i know i have had too many sweet snacks and desserts this holiday season.  time to get back on track with healthier choices.  this is one of my favorites, it's quick and tasty. 

 a great recipe to make when you find your tomatoes are becoming overripe. 
i find myself making it every thursday and enjoying it all weekend long.

6 - 8 plum tomatoes
1 sweet onion
2 jalapeño peppers
1 whole garlic
olive oil
coarse salt
2 limes squeezed

set oven to 375 degrees
line cookie sheet with aluminum foil
rough chop tomatoes and onions, place on cookie sheet
slice jalapeños, place on cookie sheet - i wear latex gloves so they don't burn me
sprinkle with olive oil and salt, mix the vegetables  to coat
cut off top of garlic, sprinkle with olive oil and salt, wrap in aluminum foil place on cookie sheet
roast for 30-40 minutes, until vegetables begin to get charred
cool, put vegetables into food processor 
 squeeze garlic cloves into food processor
add pepper and lime juice
puree to desired consistency
store in fridge until ready to use, keeps for 3 to 4 days
